Winding its way through South Louisiana, the Mighty Mississippi River has long been an essential resource for our residents. Not only are cargo and freight shipped up and down river, but nutrients vital to our beautiful fruits, vegetables, and berries as well. Natural vitamins and minerals travel downstream and turn into the fuel for Louisiana’s bounty. Each time the river floods, or streams run off it, those nutrients are deposited in the dense soil along the riverbanks. This is what we know as the “Alluvial Soils” in South Louisiana; “water washed” silt and fertile materials that make the soil so prosperous for growing food; the prime example being Tomatoes. The millennia of river runoff facilitate the best and most flavorful tomatoes there are, and those tomatoes will shine all summer long at Broussard’s.
Thin skinned, juicy, and with an intensely sweet smell, the tomatoes grown in this alluvial soil have been called “Creole Tomatoes”. Not a specific variety, but a description of where they are grown, Creole Tomatoes are an essential
component of our daily meals. They can be dressed onto a Po-Boy, cooked down into a Red Gravy, smothered with Okra, served in a salad, or just sliced and eaten with a pinch of salt. Whether or not they get added to Gumbo, however, is a source of local, cultural, and family debates; at Broussard’s, our Duck & Alligator Sausage Gumbo is certainly finished with them.
This summer at Broussard’s we will highlight the myriad uses that tomatoes have in New Orleans Food.
